Tuna with Horseradish Mustard

Cook Time: 15 minutes | Total Time: 15 minutes

Ingredients

3 packages Vital Choice albacore tuna loin medallions (6 ounces each)
1/3 cup nonfat plain Greek yogurt
2 tablespoons stone-ground mustard
1 to 1 1/2 teaspoons prepared horseradish
1 1/2 teaspoons Vital Choice organic extra virgin olive oil

Instructions

Make the horseradish mustard: Stir together yogurt, mustard and horseradish in a small bowl; mix well. Cover and set aside until serving time.
Heat oil in a large nonstick skillet over medium-high heat until hot. Season each side of tuna with coarsely ground pepper, pressing to adhere.
Place tuna in skillet; cook 2 to 3 minutes per side or to desired doneness. Transfer tuna to a cutting board; cut into thin slices.
Serve with horseradish mustard.
