Ingredients

  • 1 can Vital Choice Portuguese Sardines
  • 2 tablespoons Thai sweet chile sauce
  • 1 tablespoon fresh lime juice
  • 1⁄2 teaspoon kosher salt
  • 1 piece lemongrass, tough outer leaves discarded, inner core thinly sliced
  • 1 1⁄2 cups cups cilantro leaves and stems, lightly packed and torn
  • 1⁄2 small red onion, thinly sliced

Instructions

  1. In a large bowl, whisk the sweet chile sauce with lime juice and salt.
  2. Add the cilantro, sardines, lemongrass and red onion; toss to combine.
  3. Transfer the salad to a platter and serve immediately.
