Sesame-Crusted Tuna w/ Ginger-Shoyu Sauce

Ingredients

  • 8 ounce block Vital Choice center-cut ahi tuna loin, thawed
  • 2 tablespoons Vital Choice extra-virgin olive oil
  • 1 tablespoon Vital Choice Island Style Organic Seafood Rub
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 2 scallions, thinly sliced
  • 2 tablespoons bottled yuzu or fresh lime juice
  • 2 tablespoons shoyu or soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon fish sauce

Instructions

  1. Make dipping sauce: Combine yuzu, shoyu, mirin, ginger, sesame oil and fish sauce in a small bowl. Set aside.
  2. Combine the Seafood Rub and sesame seeds in a shallow bowl.
  3. Pat tuna dry with a paper towel and rub with a tablespoon of olive oil. Coat the tuna in the sesame mixture, pressing it on to form an even crust.
  4. Heat 1 tablespoon of olive oil in a heavy skillet over medium-high heat until just smoking. Place tuna in skillet and cook 1 to 2 minutes; flip and cook another 1 to 2 minutes to form a brown crust; center should be rare and translucent red.
  5. Transfer to cutting board and cut into uniform ½-inch slices. Sprinkle with scallions and serve with chopsticks and dipping sauce.
