Ginger Lime Halibut Salad

Ginger Lime Halibut Salad

Ingredients

  • 1 pound Vital Choice Alaskan halibut, cooked and shredded into chunks
  • 6 cups chopped romaine lettuce
  • 1/2 cup chopped fresh cilantro
  • 1 cup shredded carrots
  • 1 large avocado, peeled and sliced
  • 1/4 cup Vital Choice organic extra virgin olive oil
  • 1/8 cup lime juice
  • 1 tablespoon fresh lime zest
  • 1 tablespoon grated ginger
  • 1/2 tablespoon agave nectar
  • 1 clove garlic, minced
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Mix together the lettuce, cilantro, carrots, halibut and avocado in a large bowl.
  2. Make the ginger lime vinaigrette: Whisk the olive oil, lime juice, ginger, agave, garlic, and salt and pepper to taste together in a small bowl.
  3. Pour the dressing over the salad and serve.
