Alaskan Salmon with Sweet-Smokey-Spicy Rub

Ingredients
- 4 Vital Choice wild salmon fillets (6 ounces each)
- 2 tablespoons organic Vital Choice extra virgin olive oil
- 2 teaspoons smoked paprika or organic paprika
- 2 teaspoons brown sugar
- 1/2 teaspoon organic ground cumin
- 1/2 teaspoon organic black pepper
- 1 teaspoon sea salt, divided
- 1/2 teaspoon cocoa powder
- 1/4 teaspoon red chili flakes or organic cayenne
- 1 pound cubed Yukon Gold or fingerling potatoes, cubed
- 1/2 teaspoon thyme
Instructions
- Heat oven to 400 F.
- Make rub: Blend paprika, brown sugar, cumin, pepper, 1/2 teaspoon sea salt, cocoa powder and chili flakes in a small bowl. Reserve 1/2 tablespoon rub for potatoes and set aside. Rub/pat remaining spice mixture over of salmon. Let the salmon rest for 5 minutes before cooking.
- Heat an ovenproof pan on stovetop over medium-high heat. Add 1 tablespoon olive oil, then salmon, rub side down. Cook 3 to 4 minutes, until browned. Turn fillets over and place entire pan in oven. Roast until fish is just opaque throughout, about 5 to 8 minutes.
- Roast potatoes: In a bowl, combine 1 tablespoon olive oil with cubed potatoes. Add thyme and 1/2 teaspoon sea salt to reserved rub; sprinkle herb blend over potatoes and stir to coat. Place potatoes on oiled pan and roast for 15 to 20 minutes.
- Serve potatoes and salmon warm. Add a green vegetable or salad to complete the meal.
