Tapatío Grilled or Broiled Salmon Fish Tacos

Ingredients
- 2 portions Vital Choice wild Alaskan salmon (4 ounces each)
- 2 tablespoons vegetable oil for grill or broiler pan
- 1 teaspoon Tapatio seasoning powder
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- ¼ red cabbage, shredded
- 2 carrots, shredded
- 1 cup cilantro leaves, minced
- ½ cup mayonnaise
- 1 tablespoon Tapatio hot sauce, plus extra for garnish
- 1 tablespoon lime juice
- 1 teaspoon agave nectar
- 2 avocados, sliced
- 8 small corn tortillas
Instructions
- Combine cabbage, carrots, minced cilantro, mayonnaise, Tapatio hot sauce, lime juice and agave in a bowl. Toss to coat and set aside.
- Pre-heat grill or broiler to high heat
- Combine salt, pepper, Tapatio seasoning powder in a bowl. Coat salmon with rub.
- Warm corn tortillas on grill for 1 minute and wrap in foil to keep warm.
- Brush grill or broiler pan with non-stick cooking spray or vegetable oil.
- Grill or broil salmon 3 minutes per side Remove from heat and roughly shred with a fork - it should flake away easily, but try to keep medium-sized chunks
- Add salmon to each warm corn tortilla. Top with a ¼ cup slaw, avocado slices and extra Tapatio hot sauce.
