Sesame-Crusted Tuna w/ Ginger-Shoyu Sauce

Ingredients
- 8 ounce block Vital Choice center-cut ahi tuna loin, thawed
- 2 tablespoons Vital Choice extra-virgin olive oil
- 1 tablespoon Vital Choice Island Style Organic Seafood Rub
- 1 tablespoon white sesame seeds
- 1 tablespoon black sesame seeds
- 2 scallions, thinly sliced
- 2 tablespoons bottled yuzu or fresh lime juice
- 2 tablespoons shoyu or soy sauce
- 1 tablespoon mirin
- 1 tablespoon grated fresh ginger
- 1 teaspoon toasted sesame oil
- 1 teaspoon fish sauce
Instructions
- Make dipping sauce: Combine yuzu, shoyu, mirin, ginger, sesame oil and fish sauce in a small bowl. Set aside.
- Combine the Seafood Rub and sesame seeds in a shallow bowl.
- Pat tuna dry with a paper towel and rub with a tablespoon of olive oil. Coat the tuna in the sesame mixture, pressing it on to form an even crust.
- Heat 1 tablespoon of olive oil in a heavy skillet over medium-high heat until just smoking. Place tuna in skillet and cook 1 to 2 minutes; flip and cook another 1 to 2 minutes to form a brown crust; center should be rare and translucent red.
- Transfer to cutting board and cut into uniform ½-inch slices. Sprinkle with scallions and serve with chopsticks and dipping sauce.
