Passover Salmon Croquettes

Ingredients
- 2 cans Vital Choice skinless-boneless sockeye salmon (6 ounces each), certifed Kosher OU
- 2 eggs, beaten
- 1 small onion, chopped finely
- 4 tablespoons matzoh meal
- Salt and pepper, to taste
Instructions
- Shred salmon into fine pieces and put into a mixing bowl, adding the juice from the can. Add beaten eggs, onions, salt, pepper and matzoh meal. Mix all ingredients well.
- Form mixture into 12 to 14 patties.
- Heat frying pan on medium heat. Fry patties on both sides until well browned.
- Serve hot or cooled.
Serves: Makes 12-14 patties
