Quick, delicious, and quintessentially Hawaiian, poke (POH keh) is diced raw* fish that's served as an appetizer or as a meal with rice and toppings. This kit comes with yellowfin tuna that's pre-cut in half-inch cubes, a packet of our own Hawaiian poke seasoning, and a recipe card with easy instructions. Known also as ahi, our yellowfin is handline-caught one fish at a time in the Western Central Pacific Ocean by independent fishermen. Unlike other yellowfin tuna sold in the U.S., which is typically exposed to synthetic carbon monoxide (CO) gas, our supplier's cutting-edge technology uses natural hickory wood smoke to preserve color and taste while enhancing food safety and extending shelf-life once thawed. One-pound kit serves two to four.
