Marinated Mediterranean Salmon

Prep time 35 minutes.
Serves 6

6 oz frozen limeade, thawed
3/4 cup organic extra virgin olive oil
3/4 cup natural tamari soy sauce (low-sodium)
2 tablespoons minced fresh garlic
2 tablespoons chopped fresh rosemary
6 Alaska Salmon fillets (6 oz each)

  • Combine limeade, olive oil, soy sauce, garlic and rosemary in a flat dish.

  • Place salmon in marinade; turning several times to coat. Cover, if needed, and refrigerate 30 minutes.

  • Preheat grill or broiler to medium-high heat.

  • Remove salmon from marinade and place on a well-oiled grill or rack, 4‒5 inches from heat. Cook, turning once, 6‒8 minutes, just until fish is opaque throughout.
