Juicy mango comes together with sweet bell peppers, red onion, tart pomegranate seeds, and spicy jalapeño to create a mouthwatering experience when paired with flaky halibut.

Ingredients
  • 1 mango (diced)
  • 1 red bell pepper (diced)
  • 1 red onion (diced)
  • 14 cup fresh cilantro (diced)
  • 12 cup pomegranate seeds
  • 1 jalapeño (diced)
  • Lime juice (to taste)
  • 1 tablespoon olive or avocado oil (optional)
  • 2 halibut fillets
  • 1 tablespoon butter (melted)
  • Salt and pepper to taste
  • Lemon juice

Instructions
    For the mango salsa

  • In a medium bowl, combine the mango, red bell pepper, red onion, cilantro, pomegranate seeds, and jalapeño. Drizzle with fresh lime juice. For added balance and richness, you can incorporate a splash of olive or avocado oil.
  • For the halibut

  • Preheat the grill to medium-high heat. Prepare the grill by oiling the grates. This will help prevent the fish from sticking to the grates.

  • Brush the halibut filets with melted butter and season with salt and pepper. Grill the halibut for about 4-5 minutes per side, or until the fish flakes easily with a fork.

  • When the fish is done, remove it from the grill and drizzle it with lemon juice.

Notes

If pomegranates are unavailable, strawberries are a great substitute.
