1 (2-3 lb) organic grass fed chuck roast
1 Tablespoon Kosher salt
½ Teaspoon black pepper
½ Teaspoon garlic powder
3 Tablespoons organic extra virgin olive oil
1 large onion, chopped
2 large tomatoes, cut into quarters
2 cups organic beef stock
1/3 cup organic red balsamic vinegar
2 bay leaves
½ cup dry white wine
1 ½ cups water (plus more if needed)
