2 Vital Choice wild Alaskan silver salmon fillets
2 tablespoons extra virgin olive oil
Juice from half a lemon
Salt and pepper
Preheat oven to broil.
Drizzle 1 tablespoon olive oil into a medium heat proof skillet. Place salmon skin side down and gently rub olive oil on the top. Sprinkle with salt and pepper. Broil in the oven for 8 minutes per inch of thickness. Remove and check for color. Let rest for 2 minutes. Squeeze lemon juice and olive oil over the salmon to serve.
